Ingredients

  • 1 ½ tbsp garam masala
  • 3 tsp ground turmeric
  • 1 ½ tsp salt
  • ¾ tsp ground black pepper
  • 600 g chicken thighs, skinless, boneless, cut in bite size pieces
    or 600 g chicken breast fillets, skinless, cut in bite size pieces
  • 250 g couscous
  • 630 g water
  • 30 g sunflower oil
  • 10 stalks fresh flat-leaf parsley, leaves only
  • 3 garlic cloves
  • 80 g onions, cut in halves
  • 1 tbsp sunflower oil
  • 60 g green olives, pitted
  • 1 tsp chicken stock paste, homemade
    or 1 chicken stock cube (for 0.5 l)
  • 1 lemon, preferably organic, zest and juice
