Ingredients

Meatballs

  • 4 oz Parmesan cheese, cut into pieces
  • 2 oz whole milk
  • 1 oz panko bread crumbs
  • 4 oz red onions, cut into pieces
  • 2 garlic cloves
  • 1 oz fresh mixed herbs, leaves only (parsley, basil and oregano)
  • 1 large egg
  • 1 tbsp soy sauce
  • 1 tbsp homemade salt substitute and flavor enhancer (see Tip)
  • ¼ tsp ground black pepper
  • 18 oz ground chicken, broken into pieces
    or 18 oz ground turkey, broken into pieces
  • extra virgin olive oil, to grease

Sauce

  • ½ oz extra virgin olive oil
  • 7 oz red onions, cut into wedges
  • 2 garlic cloves
  • ½ oz fresh mixed herbs, leaves only (parsley, basil and oregano), plus extra to garnish
  • 1 can tomatoes (15.5 oz), whole or diced
  • 1 oz tomato paste
  • 12 oz water
  • 2 tsp sugar
  • 1 tbsp homemade salt substitute and flavor enhancer (see Tip)
  • ¼ tsp ground black pepper
  • 2 oz heavy whipping cream
  • ¼ tsp dried red pepper flakes, to taste
