Ingredients

Chipotle Oil

  • ½ oz chipotle chili, in adobo sauce, canned (1 chili)
  • 5 oz safflower oil
  • 1 ½ oz white wine

Chipotle Sabayon

  • 6 egg yolks, from large eggs
  • 2 tsp white wine vinegar
  • ¼ tsp salt
  • 4 tbsp unsalted butter
  • 4 maitake mushrooms, large, de-stemmed (approx. 1 pkg.)

Poached Eggs

  • 73 oz water
  • 1 tsp vinegar
  • vegetable oil, to grease
  • 4 large eggs
  • 4 slices sourdough bread (1 in. thick), toasted
  • fresh chives, sliced, to garnish
