  • 1 pinch red chilli (optional)
  • 1 dried bay leaf
  • 2 - 3 anchovy fillets, in oil or brine, well drained
  • 700 g chicken legs, skinless, bone in (thighs and drumsticks separated)
  • 100 g lager beer
  • 50 g vegetable broth (optional)
    or 50 g water + tsp vegetable stock paste, homemade (optional)
  • 1 pinch ground white pepper
